Hey everyone!
Yesterday I made Tom Yum soup for dinner! Disclaimer: it’s super spicy!! However, it was still really good, we paired it with brown rice and a nice kale salad. The soup can also be modified for those who are vegetarian and vegan!
Recipe:
- 500ml Chicken Broth (or whatever fits your diet)
- 300ml Water
- 1lb Shrimp (peeled and deveined)
- 1 cup Straw Mushrooms (or other mushrooms)
- Lemongrass (to taste
- 2 Thai chilis
- 3 slices Galangal
- 2 slices Ginger
- 1tbsp Fish Sauce
- 1 tsp Thai Chili Paste
- salt/pepper, Lime Juice, and chopped Cilantro to taste.
Simmer water and add lemongrass, Thai chili, galangal, and ginger. boil for 5-10 minutes, add fish sauce, chilipaste, and salt/pepper, Lime Juice, and chopped Cilantro to taste. Add shrimp and mushrooms, finish cooking for 5 minutes.
ok, I will always venture to try something new! what is galangal and where would i find it???

Hey! Galangal is a root very similar to ginger! It looks a lot like ginger and it’s in the same family, however, galangal has a sharp piney flavour and is more like a tough branch than a root, so a sharp knife is highly recommended! I actually bought a package for the soup from Independent over on Bayview that has all the ingredients (except for ginger). The soup is really spicy too just have to reinforce that haha but I hope you guys enjoy it!
